The Holiday Drink – How to Make It

We present a home-style version of a cocktail from the seasonal menu. Designed as a large-volume pre-mixed that is packed with flavours associated with holiday season, rendering it excellent for a celebration. Reserve the remaining cordial to use in brunch beverages, puddings, or to mix additional servings of the drink.

Makes enough for 10 servings

To make the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Drink (produces 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Directions

Making the Cordial: Place the listed ingredients in a saucepan, bring to a light boil, mixing to dissolve. Next, remove from the stove allowing it to reach room temperature entirely. Decant to a clean bottle, cap it keeping it in the fridge, where it will keep for up to four weeks.

To make Cocktail Base: Mix every spirits and syrup in a sizeable container, leave to sit for an hour, then filter it preferably using cheesecloth, to ensure it's fully clarified.

For serving: Add 85ml from the premix to a stirring glass filled with ice, and stir carefully for a minute to cool it down. Strain to a frosted cocktail glass or equivalent, decorate with some cranberries and complete it with a light spray of mandarin oil over the top.
